Omelets are extremely economical and the variations are limitless. Just beat 2 eggs per person with salt and pepper. Then pour the mixture onto a buttered skillet, and add your chosen garnishes: diced ham, sliced or chopped veggies, fresh herbs, etc. Let the bottom set and make sure there are no more loose bits of egg on top by swirling the pan. Then flip and cook for a minute or so more. Serve immediately.
