Parsnip pancakes

Peel and grate parsnips. Place in a bowl, add finely chopped onion, Parmesan, salt and beaten eggs. Mold into patties and fry in an oiled pan. Make a dip by mixing yogurt with lemon, cumin, salt and a bit of pepper. It's a crunchy, indulgent change from the regular boiled variety!
