Cheese croquettes

Heat milk and butter with a bit of salt. Add flour, remove from heat and stir. Add egg yolks to the preparation, along with grated cheese. Refrigerate to cool. Cut into sticks, dip in beaten egg white and then breadcrumbs. Cook in a greased pan. Serve with herbed sour cream.
