Why you should eat amaranth every day

And brownies

To make these brownies, you'll need:

  • ½ cup amaranth flour
  • ¼  teaspooon baking powder
  • 1 cup sugar
  • 7 teaspoons cocoa powder
  • 4 ounces chopped dark chocolate 
  • ¾ teaspoon salt
  • 2 tablespoons flaxseeds soaked in 3 tablespoons of warm water for 10 minutes.
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts
  • 1 teaspoon instant coffee powder
  • 6 teaspoons olive oil
  • ¼ cup boiling water

Mix the flour and baking powder in a bowl. In another bowl, mix the cocoa, chocolate, coffee and salt. Add boiling water, and mix with a spoon until the chocolate melts. Add the sugar, vanilla and flax seeds, and mix well. Add the flour and mix gently with a spoon. Pour the batter into a lined baking tray, and bake for 30 minutes at 350° F.
