Here's a great way to get more amaranth in your diet! To make these chocolate cookies, you'll need:
3 ½ cups amaranth flour
1 cup wheat flour
1 cup toasted amaranth seeds
2 tablespoons of linseed (flax) soaked in ½ cup of warm water, for 10 minutes
1 teaspoon baking powder
1 cup sugar
½ cup water
2 tablespoons cocoa powder dissolved in 1/5 cup of warm water
7 ounces butter
Mix the flours, amaranth seeds, sugar and baking powder in a bowl. In a separate bowl, combine flax seed water and cocoa water. Add butter and mix, then add all the dry ingredients. Let the dough rest for 30 minutes, then roll flat on a floured surface and cut into cookie shapes. Bake at 350° F for 15 minutes.
