You can turn it into amaranth "popcorn"

Roasted amaranth seeds puff up just like little pieces of popcorn, and it is commonly prepared this way. To make your own amaranth popcorn, heat a heavy saucepan on medium heat with the lid on. When the pan is hot, add about  ¼ cup of amaranth seeds . Move the pan about and shake the seeds as they begin to pop, but take care not to leave it on the heat for too long, as they can burn easily.  You can add your amaranth "popcorn" to everything from soups, salads and desserts.
