Chestnut stuffing

If you can find them, use peeled, vacuum-packed chestnuts to make this recipe really simple.
In a pan, brown 1 finely chopped onion, some chopped bacon and the turkey liver (finely chopped) in butter.  Mix with 1 pound of peeled chestnuts, cooked and finely chopped, 8 ounces sausage meat (removed from casing), fresh parsley, thyme and ground mace. Season to taste and mix again thoroughly.
