The Shed - Santa Fe, NM
The Shed came into being circa 1960, offering what it calls "creative Mexican cooking" to hungry Santa Fe eaters. The menu is distinctly Southwestern, featuring their signature red chile cheese and onion blue corn enchiladas. Tacos, meat and poultry dishes round out the choices, and they have a well-stocked bar for those who enjoy a good cerveza with their meal.

These quick and easy chicken quesadillas are the perfect, last-minute family dinner!
INGREDIENTS:
- 2 chicken breasts
- 1/2 cup of tomato sauce
- 1/2 cup of chives, chopped
- 1 tsp. of Mexican spice mix
- 4 Tortillas
- Cheddar
- Salt, to taste
METHOD:
- Put shredded chicken breast, tomato sauce, chives, and mexican spice mix in a bowl and mix together.
- Lay out the tortillas. Place a slice of cheddar in the center, and cover with the chicken mix.
- Fold up tortillas, and heat in a frying pan until golden.
- Enjoy!
