Crispy Mini Chicken and Shrimp Spring Rolls

For a dozen mini spring rolls, you'll need : 

  • 12 rice papers
  • 1 scallion with the green and white parts
  • 1 small piece of peeled ginger 
  • About 1/2 lb uncooked chicken
  • 8 raw shrimp
  • 2 oz rice noodles
  • 1 tablespoon lemon juice
  • 1 tablespoon fish sauce
  • 1/4 teaspoon hot chili paste (optional)
  • 1 egg white
  • Fresh mint leaves
  • Lettuce leaves for serving
  • Oil for frying
