Pineapple upside-down cake

Pineapple upside-down cake is the ideal midday pick-me-up to share at the office, with your kids or just enjoy on your own. To make the caramel coating, heat 1/4 cup sugar with a bit of water, then use it to cover your springform pan. Add drained pineapple slices, and top with pound cake batter made of 3/4 cup softened butter mixed with just under a cup of sugar, to which you add 4 eggs, 1 1/3 cups flour and 2 teaspoons baking powder. Bake for 45 minutes at 350° F. Flip carefully onto a serving plate with the pineapple slices facing up. Serve warm.
