How does stewed ratatouille and meat sound to you for lunch? For the ratatouille: heat 2 minced onions in an oiled skillet, add 2 quartered eggplants and 1 diced yellow bell pepper. After 5 minutes, add 2 roughly chopped zucchinis. Season with salt and pepper to taste, then add some garlic, fresh thyme and a bay leaf. Finally, add 5 quartered tomatoes, and let simmer for 30 minutes. Finish your meal on a sweet note with a cookie or small brownie.
