This recipe is perfect for your small-budget weeknight meal rotation. Prepare mashed potatoes, and set aside. In a pan, saute 2 minced shallots in a bit of oil. Add canned flaked tuna, season to taste and heat for two minutes. Layer the tuna on the bottom of a buttered baking dish and top with the mashed potatoes. Bake for 10-15 minutes at 350 °F. Serve warm.
