The guide to perfectly flipped foods

Steak

You might have heard it said that you should never flip a steak (or any piece of meat for that matter) more than once. This method allows the steak to develop a nicely charred surface. However, if you dry your steaks before cooking them and use a hot pan, you can achieve the same browning effect even if you flip often. Those in favor of flipping every minute or even more frequently argue that a steak which has been flipped often will be more evenly cooked through and also cooks faster—in up to 30 percent less time. Of course, your total cooking time will vary according to how you enjoy your steak. Cook it briefly if you enjoy your steak rare, and for longer if you prefer medium or well-cooked meat. And use tongs for best results!
