Frittatas or Spanish omelettes

Some people cook their frittata in the oven, but you can make a successful frittata in a skillet using the 'plate method.' It also comes in handy for Spanish omelettes, for which you can find a step-by-step recipe here. For the technique: when the bottom of the frittata and the outer edges are cooked, take a spatula and work it around the frittata to loosen it. Then take a plate and place it over the top of the pan. Holding the plate over the pan, flip the pan over in one quick movement so that the frittata is transferred to the plate. Finally, slide the frittata back into the pan, cooked side up, and continue cooking for a couple more minutes until done. Once the frittata is back in the pan, you can use a spatula to neaten the edges and make it perfectly round.

These Cheesy Cauliflower Pizza Cups are just what you need when snack o'clock rolls around!

 

Ingredients

Makes 6

  • 1/2 cauliflower head
  • 8 eggs for cauliflower mix
  • Pepper
  • Salt
  • 4-6 cups shredded cheese
  • 6 slices salami
  • 6 tbsp pizza Sauce

 

Method

  1. Boil diced cauliflower in salted water until tender.
  2. Blend, then transfer to mixing bowl.
  3. Mix in 2 eggs, pepper and 2 cups of shredded cheese
  4. Share the cauliflower mixture out between 6 ramekins, forming little cups
  5. Add 1 cup of shredded cheese
  6. Bake for 25 min at 375°F
  7. Add a slice of salami, a tbsp of pizza sauce, and one raw egg to each ramekin
  8. Top with cheese and return to oven for 7 min at 375°F
  9. Serve, and enjoy!
