A delicious cheesecake made from scratch that has the consistency of a cheesecake but tastes like a pumpkin pie
Crust
1 sleeve of honey graham crackers plus 2 more individual crackers.
3 tablespoons brown sugar
1/2 teaspoon cinnamon
1 1/2 sticks melted butter (Healthy alternative:3/4 cup butter substitute)
Filling
3 (8 ounce) packages of low-fat cream cheese
1 (15 ounce) can of pumpkin puree
3 eggs plus one egg yolk
1 1/2 cups sugar (Healthy alternative: 1 1/2 cups Splenda or sugar in the raw)
1/4 cup low-fat sour cream
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
2 tablespoons flour (Healthy alternative: 2 tablespoons whole wheat flour)
1 teaspoon vanilla extract (optional)

American Sweet Potato Pie

Preheat oven to 325 degrees
1 (9-inch) pie crust
2 large eggs, beaten
1/2 cup granulated sugar
1/2 cup light brown sugar
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/2 teaspoon pure vanilla extract
1/2 teaspoon finely grated lemon zest
1 1/2 cups sweet potato puree (from 2 large cooked sweet potatoes)
3/4 cup heavy cream
3/4 cup milk

1 pound Italian Sausage (you could also use bacon)
1 cup mushrooms chopped and sauteed
1/2 cup chopped tomatoes
1 red onion chopped and sauteed
8 large eggs
1/4 cup milk (or half and half depending on how you’re feeling that day)
1/2 tbsp vegetable oil
1/2 tsp baking powder
salt and pepper to taste
Freshly grated Parmesan Cheese as needed
