Empanadas are delicious little pastries, usually stuffed with meat, potatoes, cheese or vegetables. But to change things up a little, here’s a recipe for empanadas that are stuffed with Brie and apples. The apples add a refreshing, sweet touch to an otherwise salty recipe. These empanadas are great for when you’ve got a little bit of cheese leftover that you don’t know how to recycle.

You’ll need:

1 readymade roll of puff pastry

1/2 cup Brie, Camembert or fresh goat cheese

2 apples

1 tablespoon butter

1 egg yolk

1 tablespoon milk
