Double boil by the book

A double boiler is extremely handy for cooking, reheating or slowly melting food without burning it. But to do it successfully, you have to play by the rules. The trick is to use a saucepan and a slightly larger heatproof bowl. Fill the pan with water until you can place the bowl on top without it touching the surface. Also remember to turn off the heat once the water starts boiling to avoid cooking the preparation in the bowl.
