BBQ pork chop and sauteed cucumber

Raw cucumbers are perfect in salads for their fresh and crunchy qualities, but did you know you can also eat them cooked?

For 2 people, peel 2 cucumbers and cut them in half lengthwise. Then slice them up. Heat 1 tablespoon olive oil in a skillet, add the cucumber and let cook until slightly brown. Season with salt and pepper, and serve with a BBQ pork chop cooked up on the grill.
