Ham, potato, egg and cucumber chopped salad

Chopped salad cups make a lovely light dinner that comes together in no time. In each glass, layer as follows: diced cucumber, diced ham, diced potatoes or white rice, finely chopped hard-boiled eggs, and dress in a shallot vinaigrette. For the eggs, heat water in a saucepan with a dash of vinegar, add the eggs and boil for 10 minutes. You can serve with crusty bread or a cold soup on the side for a more substantial meal.
