Potato salad is usually a mayonnaise-laden side for cookouts or chicken dinners, but you can turn it into a healthy main by adding eggs and subbing vinaigrette for the mayo! Simply boil finely chopped potatoes in a large volume of salted water on the stove, then let cool. Dress with a light mustard vinaigrette, sprinkle with minced shallots, garlic and herbs (for example, chives). Top with thinly sliced hard-boiled eggs and serve.
