This winning torta comes from the Mexican state of Puebla. You'll need a sesame seed bun—preferably one made with eggs so it is soft and brioche-like. Then fill it with sliced avocado, onions, hot peppers, a breaded meat patty (sub pickled pig skin or stewed pork, etc.), a fresh stringy cheese (like Mozzarella) and olive oil.
