The word kebab encompasses a surprisingly large range of different meat dishes from all around the Middle East and Asia. But of course, my grandmother's kebabs are my favorite! Her secret kebab recipe includes lots of fresh garlic, parsley and Syrian red pepper, which she then marinates for hours and grills on the barbecue. You can try mixing different types of meat together, like lamb and beef or beef and mutton, to produce a rich, flavorful kebab. If you're using wooden skewers for your kebabs, make sure you soak them in water before grilling them to stop the kebabs from bursting into flames! I love to serve kebabs on homemade flatbreads, with thinly sliced red onions, chopped fresh parsley or mint, and a garlicky yogurt dip like Greek tzatziki.

Method

  1. Boil the desired amount of small potatoes until tender.
  2. Spread on a lined baking tray, flatten slightly using a cup or jar. Don't over-flatten them!
  3. Sprinkle liberally with shredded cheese and Parmesan.
  4. Top with bacon slices approximately the same size as the potatoes.
  5. Drizzle liberally with balsamic vinegar.
  6. Place in oven, under the grill for 15 min at 375°F until the cheese is melted and  the bacon is crispy.
  7. Enjoy!
